How to Store Iberian Ham at Home: Practical Guide

Storing a Whole Iberian Ham

If you have a whole ham with bone, follow these tips to keep it in perfect condition:

Ideal Storage Location: Where to Place the Ham

Ham should be stored in a cool, dry, and well-ventilated place, away from heat sources and humidity. The ideal temperature is between 15ºC and 20ºC.

Avoid:

  • The refrigerator (unless it is sliced).
  • Direct sunlight or excessive humidity.

A support stand, such as a ham holder, is ideal for securing it and making slicing easier.

How to Protect the Cut Surface

Each time you slice ham, cover the exposed area with its own fat or a clean cotton cloth. This prevents the surface from drying out and helps maintain its juiciness.

How Long Does an Opened Ham Last?

Once started, it is best to consume it within 3 to 4 weeks to enjoy its peak flavor and texture.

Storing Sliced or Boneless Ham

If you have purchased ham in vacuum-sealed packs or boneless pieces, storage is different:

Vacuum-Packed Sliced Ham

Vacuum-packed ham lasts longer. To store it correctly:

  • In the refrigerator: Keep it between 0ºC and 5ºC without opening the package.
  • Before consuming: Let the pack sit at room temperature for 30 minutes before opening to restore its texture and aroma.
